Description
Deep red colour, almost inpermeable. Complex bouquet with aromas that reflect both of the variety and the maturation in oak barrels. Sour cherry jam, dried plum, fig, black pepper, and bitter chocolate, with hints of vanilla, cedar, and leather. Soft and warm on the palate. Rich and full, with well-integrated tannins, elegant through all the way, thanks to the balanced vivid acidity. The ripe fruit and the spices make their presence felt up to the very long, persistent finish.
Ideal pairing for hairy game, and red meat, especially cooked in spices. Veal fillet in Madeira sauce, Tournedos Rossini, and veal liver on the grill, are only some of the good pairings.
